If I understand the OP correctly they have a DVD which is recorded on both
sides and they want to convert it to a single DVD+/-R disc. I'm assuming
they will want to keep menu systems and such in place.

I suppose the question might be better put as "How are the two sides merged
into a single set of DVD files on the hard disk so that DVDshrink can
process them?"

Unfortunately I couldn't find anything like that in the DVD FAQ url you
