- nvidia 5700 vs. radeon 9700

If these cards were the same price (nvidia 5700 and radeon 9700) which would
give the better performance? The 5700 is an 'ultra'.

different things. Even so, on average the Radeon 9700 is
faster, particularly at DX9 games. Neither is what I'd call
fast these days though, if the goal is gaming (and why else
bother with higher cost of a gaming card?) then a better
deal in the long term might be to buy a newer generation of
card, try to stretch the budget up to cover a Geforce 6600GT
as there have been some discounts online recently that have
put them under $130 given a little hunting.
