I missed the beginning but if someone has not mentioned it yet - right
click on the text file->open with->select notepad->check the box that says
to use this application with all files of that extension. You should be
good to go now (double clicking the file should run notepad).

Maybe I am not explaining myself correctly. When I double click on a text
file ( in my case I have it set up for single click) the text files open,
but they do not expand fully, they become a small rectangular box ( its
completely minimized) , which I have to click on again for it open up
completely. It is a nuisance, its been doing it for a few months and wasn't
doing it before. I don't know what I unchecked or checked to get it doing
this. It doesn't do it with any other files.

Not sure if this got answered yet but you might try clicking one of the
text files open. Then stretch each of the four sides till it fills the
whole screen. X out and then try it again. This might fix all the text
files at once.
