If I log on as administrator then how do I edit the registry entries
of other users?
In the registry I can see lots of keys which are presumably my own.

It's based on Hives, when you log on and edit the Registry. The active
user Profile (Hive) is HKey_Current_User. The complete storage for
all Profiles is under the HKey_Users and is displayed by the SID or
Security Identifier string.

Log on to that particular User's Account.
