open documents, show "all" docs

When I go to open a document I always have to change it to "show "all"
documents. Can the default be set to "all" instead of "office files"?

No. Windows/Office do not support this. Maybe there is some
third-party tool to enable this. Check sites like
http://www.tucows.com/, http://www.simtel.net/simtel.net/.
