Hi, I have to maintain 70 computers in classrooms. I have the ICONs set in a
certain way on the desktop so that I know where they are. Users can
rearrange and/or added icons to the desktop, which is ok. However, how can
I have the setting set back to the way they were when the Users have log off?

You could use mandatory profiles. We set our classroom machines to load
the profile from the server at logon, and delete the local copy at logoff.
Put "mandatory profile" into your favorite search engine. You may also
want to add "roaming profile" to your search.
