I have heard some people are using portable Sony MiniDisk Player/Recorders
to record wedding voices at the altar. Maybe something like that would
work.

Sony is not the only manufacturer of MD equipment.
They are relatively inexpensive (~150USD and up) and
make pretty high-quality recordings.

Some MD recorders (mostly larger, home units, not portables)
have SPDIF digital output which you can plug into the digital
input on some sound cards.
Doesn't seem worth the trouble/cost just for an occasional
voice-over. OTOH, for recording interviews, SFX, concerts,
etc. its hard to beat.
