My Sony F707 still camera records mpeg that I was able to import and
edit in Adobe Premiere. It was pretty good quality for a student
project, but I think you'd get better results with a digitial video
camera. Maybe you can just rent a digital video camera?

I've only used Premiere and Windows movie maker software, so I can't
really offer comparison. But I found Premiere fairly easy to use and
you can easily do the kinds of things you're talking about.
