Deploying in Office in domain

I need to clean up the installs of some of the computers in our domain
whereby the user gets an error connecting to the Exchange Server (5.5) when
he creates his profile for the first time. I can remove the default profile
(outlook or outlookxp) and then clicking on the icon allows the user to set
up their account if they know the Exchange server's name, etc. I've tried to
remove and reinstall the app and use something that has worked on new
machines (which means that when outlook is launched, it sets up outlook based
on their username).
I don't want to have to wipe out each user's profile to make this work.
What am I missing?
I use the defaults when creating the MST file except specify the %USERNAME%
variable.
