However, I didn't see the LVM option during RH7.3 setup. Is it
available only in RH9?

(or were) available for RH 7.3. You would have to install an LVM-aware
kernel (current kernel rpm on RH 7.3 updates site is about 2.4.20), and
lvm-1.x rpm (available at www.rpmfind.net). RedHat finally included LVM
in their standard distribution in RH 8, although I'm not sure it showed up
on their installer until RH 9.0.
There may be a HOWTO now at www.tldp.org, but the implementation of LVM on
Linux was done by Sistina, and there's a manual on their website.
