How do I get all windows to default to fullscreen when I open (double-click)
on them?

Click the Maximize button (square) in the upper right corner of the window.
Press/hold down the CTRL key and click the close button (X) in the upper right
corner of the window.
The next time you open it, it should open maximized.

If it's a window opened by clicking a shortcut, another way is to right click
the shortcut icon.
Click Properties
Click in the shortcut box or the dropdown button and select maximized.
Click Apply >Ok.
