Hi,
Host headers is used when you have 2 or more web sites with differnet
domain names that are using the same IP address. I assume that your box only
has 1 IP address assigned so this would be the way forward. Within each
website properties you can set the home directory - this is where you point
it to different locations for it's files.
Take a look at the following - while they are not specifically for XP the
configuration steps are the same:
