How do I delete installed updates that I don't want?

Sounds scarey, and it is! No one (not even Bill Gates), knows what the
culmulative effect of all those patches are. I would suggest that unless a
particular update is causing a problem to leave it alone. Be sure you back
up your hard drive before removing any updates. The older the update you
remove, the greater the chance that it will throw something which was
provided by a more recent update out of whack. Tread cautiously. My 2
cents.
