This is a classic inkjet problem. You might be able to reduce it by playing
around with colour profiles, changing paper or even the lighting conditions
(natural vs artificial).

That's normal. In RGB colour mode the colour carts are mixed with black to
produce shades of grey. If you turn that off other tricks have to be used to
procuce shades of grey. A trick called dithering allows a limited range of
shades to look like a lot more shades. Example: 16 grey levels plus
dithering can look like 256 levels of grey but the image quality/resolution
can suffer. It's a trade off.
