What would you all consider to be the best training resource for the
ASA's, VPN concentrators etc since I do not have one on my network to
train on? CBTs? Simulators? (Or my most likely option renting a
rack?)

Have you tried PEMU? It is a PIX emulator - I believe it works in a similar
way to Dynamips, in that it emulates the hardware of a PIX and allows you to
run real PIX software on a Linux PC.
