File sizes of scanned documents

Hi,

We're looking to archive a whole lot of old documents by scanning them
and storing them on the computer.

Was wondering, does the size of scanned documents vary much from
scanner to scanner? Like, I know document size differs depending on
dpi, quality of scan, complexity of the image, file format, etc. But if
all these factors were the same, and you were using two different
scanners, would the file sizes be similar?

Also, to scan using character recognition (eg scanning as searchable
documents) - does this produce a larger file size? Does it take much
longer to do?

Sorry these questions are probably a bit obvious but I've never done
this before.

The two models I'm particularly looking at are:
Canon dr 1210c
HP Scanjet 5590

The file size should be the same.

No. The file size is far smaller, but it takes a little more time to do
