- MSI install server removed

I have deployed a number of apps using .msi files both through a script using
msiexec command, and through group policy. The server that these were
installed from has just died, what is going to happen when the software needs
to be removed from the workstations. Do they need to look back at the source
server for anything?
How about just re-deploying over the top from a new server containing the
..msi files? Do I end up with 2 copies of the same software on the
workstations. Especially things like Office 2003.
