Is there a way to modify the bkprunner.exe file to provide a "Full" backup
log rather that the default "Summary" log??

Sorry, I just found another post that answered my question.
NTBackup>Tools>Options>Backup Log set to Detailed - Rerun SBS Backup Wizard.
