On the Desktop, there's an application-icon labelled "EXCEL".

When this application is running, a box with the "Excel" logo and
"Microsoft Excel" is displayed on the taskbar (near the "Window
'Start'" button).

On the taskbar, how can I change "Microsoft Excel" to "Excel" (to
match the label of the desktop icon)?

You cannot change that unless the application supports retitling the
application bar title.

You may edit the Label of the Desktop Icon to be anything you wish. The
running application in the Taskbar is from the Application itself. If
they "must match", simply change the label for the desktop icon.
