I would like to add the field State when viewing opportunities. I can view
potential customers but we would like to see what state the customer is
located in ?

You can do this by adding Related Entity Column in your Advance Find...

Here you can add Related Entity Column "Address 1: State/Province" for
Related Entity "Potential Customer (Account)"
