I'm wanting to get certified for "Installing and Configuring CRM 3.0" (exam
MB2-421), but I can't seem to find ANY info on the Microsoft site, nor can I
find training materials. Am I missing something? Any ideas where I can get
more info on this exam?

If I remember correctly, the only place I have ever seen any such info was
on Partner Source.
