Custom Entities and Workflow

Does anyone know why I can only see a couple of the custom entities that I've
created in the "Entity Type" drop down list in the workflow manager?

I need to pull fields from a record that is related to the entity that I'm
am using, but the entity I want to pull from is not in the list.

Am I missing something?

Only user-owned Entities display in Workflow - i.e account, but not product
or competitors.

Can you tell me how I specify account owner rather than case owner to be
email when a case is created?

That doesn't make sense to me. I created and own all the custom Entities.
When I look at roles for Custom Entities, I am only allowed to Assign and
Share the 2 Custom Entities that I have access to in WorkFlow.

I really don't understand why I don't have access to those Entities in
Workflow.
