I have instantiated an email from a template - but what do I do with it from
there? I want to create an email from the template and send it to someone
(not the template send - that is bulk and no way to tell it NOT to send it
to the account)

CRM nor the SDK support this, but our add-on does. See:

Any idea why you would instantiate and email and then not do anything with
it?

Kristina,
The way you state your problem coudl mean a couple of things...
I'm reading it to mean that you'd like to send an email created from a template to an individual as opposed to "in bulk" to the account. If so, the solution is to click on the magnifying glass next to the Account in the To: field. You'll get a dialog box, where you can select whether you send the mail to an Account or Contact. Select "Contact", and you'll be given a list of all the contacts.
If that doesn't answer your question, then please reply back and let me know what exactly your problem is.

I am trying to do what you describe - but programmically... without user
intervention, using the SDK.
Basically, the user clicks a button on an application page that creates the
email, attaches a file to it, and sends it. One click.
