Is there a way to perform a mail merge and be able to select any field within
CRM instead of the predefined fields that are there now because not all the
fields are listed.

We have an Add-On called "WordMailMerge for MSCRM"
which addresses exactly your problem.
It allows you to make mailmerges with custom fields.
This is only one of feature! Some other features are:
- you can search for contacts with account criterias
- you can make mailmerges with contacts and the related accounts
