Has anyone come up with an approach to handling the mapping of Notes when it
starts on a Lead and is then converted to an account, opportunity, and
contact? Our users find it a pain to have to refer to back to the
originating lead for the notes.

If you really need them moved write some code to transfer them - it's not
that hard - refer to the SDK
