I'm in the process of evalutating MSCRM. If I bring real
data into the system with the 5 licenses available from
MSDN Universal, will I be able to move this data into the
real evironment when we go live? Do I simply create a
new Organization and import? Any downsides here?

if your test crm system is on a different domain from your production crm
then no because all crm data is tied into the users active directory
account.

it is possible to migrate data from one crm system to another using the data
migration framework, or your own code or a tool like scribe. However I would
recommend you treat the test system as just that and build a new one from
scratch if possible.
