Why it is not possible to order activities, e.g. e-mails by From or To
attribute in any view?

Well, the "to" field is an array,frequently populated with multiple values
of multiple entity types - so how would the system (or a human for that
matter) know the sorting basis?

(The "from" field is also technically an array, though it can have one and
only one value)
