I'd like to be able to print out a completed workflow in a nice format for
documentation. Has anyone come up with anything that would do that?

believe it or not he answer is no. Nobody has created some form of nice
workflow print utility. As we all know now CRM v4 will use a totally
different workflow engine where workflows will be able to be printed like a
visio diagram so that will solve your problem. You could create a solution
now using the SDK.
