When I Quick Create a Contact the default values of the fields not in the
Quick Create UI are not set. Is the normal? Any workaround?

You may need to set the attribute to either business required or business
recommended and make sure that the default value is correctly set. If you
do this and publish the changes then you should see the default value on the
quick create form. I tested this on a test install and it works fine, so if
your's isn't then you may want to check for a hotfix.
