Ted,

Unfortunately, the SFO client is only designed to handle "Sales" functionality.
As such, it doesn't give you access to many of the service features and this is
one of them.

CRM 2005 should have this feature.

button) there are not as many options for referencing the email to different CRM

If I create the email from the CRM client (IE), the ‘Regarding…’ lookup also
includes Case and Contract.

Outlook add-in. Is there something else that needs to be configured?
