Check the event log on the server, there will be a more descriptive message
there.

Do you know of any specific errors I should be looking for. I've checked the event log and sorted for the time that I tried sending the email and I don't see any errors at that time

Try sending another email and check again right away on the server. There MSCRM
will log details about the error there. Typically, there is a connection issue
between CRM & Exchange, but without the specific error, it's tought to help.

Where exactly are you looking? The error should be in the Application log found
in the Event Log viewer on the CRM server. The app logs it's errors there when
it encounters an error,
Another option would be to set the Dev Errors setting in web.config to "on",
this will result in the actual error being displayed ont he web page instead of
the user friendly msg you're getting.
