I have a field that needs to be changed in multiple records - how do I do
that? Goldmine had the Globally Replace option - is there something similar
in CRM?

Not globally, but you can select multiple records in a view and select Edit
from the More Actions toolbar button. It allows you to change one ore more
field values of all selected items.
