How can I update (alter) the CRM configuration for reportserver name after
changing the server?

I am afraid you need to modify the registry in CRM Server.
Type regedit in run command. And find the CRM Registry key:
SQLRSServerURL in HKLM\Software\Microsoft\MSCRM.

In CRM Deployment Manager, find your CRM server in the Server Manager folder,
right-click and Specify Reporting Server URL

You then need an iisreset for it to take effect
