sales standard process and the effect of manual probability changes

Hi all,

We use the sales standard process for our opportunities.

Through the onChange Event (Javascript) the sales stage code affects
the probability.
E.g. (stages & probability)

00-Not Started - 0%
01-Contact - 5%
02-Initial Meeting - 10%
etc.

So if a user selects stage 01 from the sales stage code picklist the
probability field gets the value of 5%.

However, we've discovered that if a user first selects a stage and
then MANUALLY changes the probability, the onChange Event no longer
affects the probability.

Is there a way to keep the onChange Event working, although a user has
manually changed the probability once or twice (because the default
probability for the stage was not appropriate)?

Or does a one-time overrule means that the probability will stick to
the applied value (although you'd expect it to change onwards along
with the change of stage)?
