- Sending Case email updates to Contact.

I want to be able to send email updates for cases to not just a client
but a specific contact within the client.
I see that the email action supports a contact as a recipient, however,
I cannot see how to add a contact to a new case. The only close field
is "responsible contact", and this is not listed as an email recipient.
Any help would be greatly appreciated.
