- System Entities Workflow in CRM

Hi all,
I want to ask if there is any way to setup a workflow accross two system
entity?
(e.g. When a customized field in Contact equals to a value, trigger the
update of a field in Phone Call activity)

No.
You'll need to create a callout on Contact Pre or Post Update to do this.
