is it posible to use two dual tuner cards? The reason I ask is if I wish to
watch one show and record two others how would be the best way to do that?

Yes, its possible to use dual tuners. Note, the scenario you put forth involves watching one show that's been recorded already, while both tuners are actively in use recording other shows. You can also install up to 2 HDTV cards with MCE 2005 and Update Rollup 2. HDTV cards require at least one analog card be installed for setup.

If you're using a set top box, you'll need one for each tuner. A good walk through on setting this up can be found here:

Use of two dual tuner cards is not supported.

All I have currently is analog cable. digital cable eventuall will happen but
not in the near future. Is it possible to wach on one dual and record 2 shows
with the other dual? And do I need a remote for each tuner?

As Jason said, only two analog tuners are officially supported by Media Center, but there is a hack that will allow for more. As for the remote, no, you only need one Media Center compatible remote, such as this one (if your computer didn't come with one, or you're building it yourself).
