Is there a way to easily find the folders/files that use a
specific NT group, so we know if an NT group is used
somewhere on the server ?

Hello,
You can use Ideal Administration for this. You will find IA at
http://www.pointdev.com - Menu "Database", "Files" & Directories": select
the directories to export in a MS Access table (can be scheduled by using
the product in command line!). Once the table is generated, just make
request for your need: search a group, a user, a permission, etc.
