I joined a Win XP Pro computer to Win 2003 Domain over a SonicWall VPN
connection, unfortunately when it rebooted it cannot log into domain
because VPN is only running when you are logged in. I know that one
option is to physically get the laptop to my office and join it
internally from the LAN, but there has to be a way to cache the
credentials remotely. Can anyone shed some light, it would be greatly
appreciated.

You can't do this - you can't log in as a domain user who has never logged
into the domain on that PC (to create cached credentials), and the VPN
client isn't working til the user *has* logged in.
Also, unfortunately, you can't use the option to log in using a dialup
connection with a VPN client such as you're using.
You'll need to take the computer to the office, or set up a VPN WAN link
between your office and wherever this remote location is.
