Hey guys i have few clarification about DHCP. when i open our DHCP server
window in the right panel window it says not connected but if click on the
server it change its status to running, is this normal?

Sometimes. I think it finds those by NetBIOS names or other
broadcasts.
IF however you create your own DHCP console and ADD that
DHCP server (or set of them) they should stay in there on each
restart.
