What versions of Windows 2003 and Exchange 2003 do I need, if I want to
do a two-node server cluster? Can I do this clustering with just the
standard versions of each?

I forgot to mention, I'm attempting to do single shared quorum
clustering (HP cluster server, with two DL380 head servers and a shared
SAN for the Exchange 2003 Server Information Store data.)

Standard editions of both aren't able to cluster.
Connection to a SAN has no bearing on the edition of the OS and
Exchange. You must use supported HBA's and, if you are booting from
SAN, follow the best practices from the vendor and MS on that.
