roaming profile vs redirected folders

From what I gather, roaming profiles (as long as they are default) cover
redirecting of desktop, app data and start menu folders, which would seem to
me would make redirecting of those folders irrelevant. Is this a correct
assumption? If so, then I could set up roaming profiles + redirected My
Documents and be set, correct?

If you want to point their My Documents folder to their Home Drive - then
you have to do it whether or not you use roaming profiles.

the Application Data folder, cookies, etc) that can increase in size very
