- Server Upgrade

Hi,
I have two servers to upgrade. The user base is about 80 people. One is to
be a file and print server, the other to be mainly an Exchange (2007
probably) server.
Looking at the Dell web site, they offer dual and quad core processors of
varying speeds. Dell want to sell me systems based on 2 quad-core processors
in each.
My questions are these:
1.My instinct tells me that this will be overkill for a File and print
server. Will Windows take advantage
