Firstly is this at all possible? and if so to what extent?
Suppose I had a SBS 2003 client who phoned me up with a problem, could I use
my WiFi connected Pocket PC to access the server remotely to check the logs,
change settings, reset a password etc?
If it can be done I imagine there must be some limitations. What are they?
Has anybody investigated the possibilities and documented their finding
anywhere?

Yup!
PPC has a full TS client, so you can do EVERYTHING from it.
Only drawback is all the scrolling you have to do on the PPC.
